In the new version of iTunes (4.8) you can strip audio from videos by going to File> Add File to Library, then get your video (Works with Quicktime, don't know about WMA). Once in your library right click video (Has a little Camera) and select Convert Selection to AAC (or whatever you conversion is). Wait a bit and boom.
